Primitivo di manduria

Variety of grapes Primitivo Soil principles Calcerous Soil of Corse origin, enriched of red iron oxide (typical of Salento’ soil). Calcerous soils are cool with good water retention. They allow the vines root system to penetrate deeply and provide excellent drainage. After the initial pressing, wine grapes undergo a maceration of 8-10 days. Once the draining and breey flesh is done, the prime must is fermented with the addition of selected yeasts in temperature-controlled tanks (22-23°). At the end of the fermentation process the new wine is finally racked. Organoleptic properties color: intense ruby red with purple-coloured effects Fragrance: elegant and supplì flavour: supplì, rich of delicate tannins   Food pairing : Here is a wine that may be enjoyed with meat platters and dishes, variety of cheeses and hard cheese. Serving temperature: 18-20° Analytical data: Alcohol 14%
